Step-by-Step Preparation

Step 1: Cooking the Rice

  1. In a large pot, bring 4 cups of water to a boil.
  2. Add soaked basmati rice, salt, bay leaf, cloves, cardamom, and cinnamon stick.
  3. Cook until the rice is 70-80% done (it should still have a bite).
  4. Drain the excess water and set the rice aside.

Step 2: Preparing the Vegetable Masala

  1. Heat oil or ghee in a pan and sauté sliced onions until golden brown.
  2. Add garlic-ginger paste and green chilies, stirring until the raw aroma disappears.
  3. Stir in chopped tomatoes and cook until soft.
  4. Add turmeric, red chili powder, coriander powder, garam masala, and kasuri methi.
  5. Mix in the chopped vegetables and cook for 5-7 minutes.
  6. Add curd (yogurt) and stir well, allowing the flavors to blend.
  7. Cook until the vegetables are tender but not mushy.

Step 3: Layering the Biryani

  1. In a heavy-bottomed pan or biryani pot, spread a layer of half of the cooked rice.
  2. Add the entire vegetable masala over the rice.
  3. Sprinkle some chopped coriander, mint leaves, and fried onions.
  4. Add the remaining rice on top to cover the vegetables completely.
  5. Drizzle saffron milk for a royal touch.
  6. Cover with a tight lid and cook on low heat (Dum method) for 15-20 minutes to allow the flavors to blend.

Step 4: Garnishing with Pomegranate

Once the biryani is ready, fluff it gently with a fork.

  • Sprinkle fresh pomegranate seeds generously over the top.
  • The sweet, juicy pops of pomegranate contrast beautifully with the warm spices and rich flavors.
