Today, we’ll focus on the Monday breakfast special—Poha with chutney, a light, flavorful dish that pairs perfectly with tea, coffee, milk, juice, or buttermilk. I’ll guide you through a simple recipe for making fluffy and delicious poha without it turning soggy.
Monday Breakfast: Poha
Here’s how you can make a quick and tasty poha in just a few minutes.
Ingredients:
- 1 cup poha (flattened rice)
- Salt to taste
- 1 teaspoon turmeric powder
- 1 teaspoon lemon juice
- 1 tablespoon oil or butter
- 1 teaspoon mustard seeds
- 1 medium-sized onion (chopped)
- 1 green chili (optional)
- 1 small tomato (chopped)
- Besan ki bhujiya or your favorite namkeen for garnish
Step-by-Step Recipe:
- Prepare the Poha:
- Take 1 cup of poha and quickly rinse it in drinking water. Be careful not to soak it for too long! Instant removal of water is crucial to avoid soggy poha.
- Add salt, turmeric, and a teaspoon of lemon juice. Mix well and set it aside.
- Cooking the Masala:
- Heat 1 tablespoon of oil or butter in a pan.
- Add mustard seeds and let them crackle.
- Add chopped onions and green chilies (if you prefer a bit of spice). Sauté until the onions turn golden brown.
- Add the chopped tomato and a pinch of salt (just enough for the tomato). Sauté for a minute or two.
- Mix and Cook:
- Add the prepared poha to the pan and mix everything well. Turn off the heat immediately to avoid overcooking, which can make the poha dense.
- Garnish and Serve:
- Sprinkle besan ki bhujiya or your favorite namkeen on top for an extra crunch.
- Serve with tomato sauce or chutney on the side and enjoy a comforting start to your week!
