Aloo Paratha is a classic North Indian dish that combines the goodness of spiced mashed potatoes stuffed inside a crispy, golden-brown wheat flatbread. This wholesome and flavorful dish is perfect for breakfast, lunch, or dinner. Let’s dive into the step-by-step preparation!
Ingredients:
For the Dough:
- Wheat flour (Atta) – 2 cups
- Water – as needed (for kneading)
- Salt – ½ tsp
- Oil or ghee – 1 tsp (optional)
For the Filling:
- Potatoes (Aloo) – 3-4 (boiled and peeled)
- Fresh coriander leaves – 2 tbsp (finely chopped)
- Green chilies (Hari Mirch) – 1-2 (finely chopped, adjust as per taste)
- Salt – as per taste
For Cooking:
- Oil or ghee – for roasting
- Butter – for serving
Step-by-Step Preparation:
1. Preparing the Dough:
- In a large bowl, take wheat flour, salt, and a little oil (optional).
- Add water gradually and knead into a soft, smooth dough.
- Cover and let it rest for 15-20 minutes.
2. Preparing the Potato Filling:
- Mash the boiled and peeled potatoes in a bowl.
- Add chopped coriander leaves, green chilies, and salt.
- Mix everything well to form a smooth filling.
- Divide the filling into small equal portions (balls) for stuffing.

3. Stuffing the Paratha:
- Take a small portion of the dough and roll it into a small saucer-shaped disc.
- Place a potato filling ball in the center.
- Gently bring the edges of the dough together to seal the filling.
- Flatten it slightly and roll it out into a round paratha, ensuring the filling spreads evenly.

4. Cooking the Paratha:
- Heat a tava (griddle/pan) and lightly grease it with oil.
- Keep the flame low and place the rolled paratha on the hot tava.
- After 20 seconds, flip the paratha and increase the flame to high.
- Spread a little oil or ghee on the surface and flip again.
- Apply oil to the other side as well and keep turning the paratha while pressing the edges with a spatula.
- Cook until golden brown and crispy on both sides.
5. Serving:
- Serve hot with butter, yogurt (curd), pickle, or chutney of your choice.
