Ingredients:
For the Batter:
✔ Sooji (Semolina/Rava) – 1 cup
✔ Curd (Dahi) – ½ cup
✔ Warm Water – as needed
✔ Salt – as per taste
For Tempering & Vegetables:
✔ Oil – 1 tbsp
✔ Mustard Seeds (Sarson) – ½ tsp
✔ Curry Leaves (Kadi Patta) – 6-8 leaves
✔ Green Chilies – 1-2 (finely chopped)
✔ Onion – 1 small (chopped)
✔ Tomato – 1 small (chopped)
For Cooking:
✔ Oil – as needed for greasing and cooking
Step-by-Step Preparation:
Step 1: Prepare the Rava Batter

1️⃣ Sieve the sooji (semolina) into a bowl to remove any lumps.
2️⃣ Add warm water gradually and mix well.
3️⃣ Stir in curd (dahi) and salt, and mix to get a smooth batter.
4️⃣ Let the batter rest for 15 minutes to allow the sooji to absorb moisture.
Step 2: Prepare the Tempering & Vegetables
1️⃣ Heat 1 tbsp oil in a pan.
2️⃣ Add mustard seeds (sarson) and let them crackle.
3️⃣ Add curry leaves and green chilies, followed by chopped onions. Sauté until the onions turn slightly golden.
4️⃣ Add chopped tomatoes, stir well, and cook for a minute.
5️⃣ Turn off the flame and mix this tempered mixture into the rested sooji batter.
6️⃣ Stir well to combine all flavors evenly.
Step 3: Cooking the Uttapam

1️⃣ Heat a dosa tawa or non-stick pan and grease it with a little oil.
2️⃣ Pour one ladleful of the batter onto the tawa and spread it evenly like a pancake (not too thin).
